Can someone please explain to me why people re-post the entire post they are replying to in their reply??

It helps to be more accurate in terms of which post you are replying to within a thread!

Sometimes editing the post to only get the relevant part doesn't go through nicely. Sometimes it does.Not everyone is equally comfortable working on a computer. And sometimes they can be in too much of a hurry to bother :)

this was just to show the difference from editing a qoute, first response lost its meaning

It is usually just one sentence that is the essence of what you want to comment on, so why copy the whole text ? Rather focus on that one rational thought that you are trying to elaborate on. We are on a pomp site, and trust me : men can only do one thing at a time, so one thought is already almost too much to ask for. (If you can do more than one thing at a time, then I have some bad news for you....)
