Any hotels that don't require a ID to make a booking in Sandton area?

Nopes. Even if there were, best you don't waste your time or put yourself at risk. All 3star plus hotels require Identification.
I think your best bet is self catering that has a lockbox for check in and out.You'd need an account on one of the booking sites and hope they don't ask you to submit your ID in advance.
Or
You can just ask your partner to book for you?
