For me it would not be money ... but time ...

Money has only ever stolen my time ... the more I get the more I do and the less time I have for myself ...

But when I take time off ... I don't know what to do ...

___

Similar to the OP I used to love mountain biking (been a cyclist since 14). One year I took a 6 week sabatical and spend the first 3 weeks in the saddle out in the bush just enjoying the trails. Then I got bored, cut my break short and went back to work ... a few months later my bike got stolen and I didn't bother replacing it ...

Paint and Golf, holiday around the world and visit museums. Learn new languages and eat all kinds of food from all over the world. I'll definitely have more animals too :)

Travel. My dream has been to retire on cruise ships. Think about it, you'll never be bored. Plenty of entertainment, there's 24/7 medical available, different restaurants with buffets, spa's, swimming pools, casino's, etc etc.
I would also buy a few properties and rent them out on a 'Rent to own' basis. Giving a couple of families a chance to own a house one day without having to pay back bond.
