You should say
'Dear ladies' and 'My dearest ladies'.

'Ladies' is the plural of 'lady'.
For example:
Ladies and gentlemen.

'Lady's' is the possessive noun of 'lady'.
For example:
The lady's pretty feet.

Same here, there will always be something new to learn. (Refering to linguistics as opposed to Mr Archaic's implication of the action of Greek)
