Advice - email programs

Does anyone have any advice on super user friendly email programs? I only have experience with Thunderbird but I am looking for something my 75 year old mom can use. I'm getting pretty tired of having to go over and read her emails for her :P

Outlook with all the options turned off... close all the little tabs and functions like fonts, flagging, etc...

Gmail is not neat.
With all the emails from the same email address concatenated, it confuses me as to which is the original.
Fax2email is of a very poor quality resolution.
